  • 1 medium onion, diced
  • 2 cloves fresh garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) red enchilada sauce
  • 1½ cups shredded cheese (cheddar or a Mexican blend)
  • 8 small flour or corn tortillas
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, sauté the diced onion until translucent, about 5 minutes. Then add minced garlic and cook for another minute.
  • Add ground beef to the skillet, breaking it up with a wooden spoon. Season with cumin, chili powder, salt, and pepper. Cook until browned, about 7-10 minutes.
  • Stir in black beans and half of the enchilada sauce, and let simmer for a few minutes.
  • Grab a tortilla and spoon about ¼ cup of the meat mixture into the center, top with cheese, roll it up tightly and place in a greased baking dish. Repeat with remaining tortillas.
  • Pour remaining enchilada sauce over the top and add the rest of the shredded cheese.
  • Bake for about 20-25 minutes until cheese is bubbly and golden.
  • Sprinkle with fresh cilantro if desired before serving.
