1 pound ground beef (lean is best for less grease)
1 medium onion, diced
2 cloves fresh garlic, minced
1 can (15 oz) black beans, rinsed and drained
1 can (10 oz) red enchilada sauce
1½ cups shredded cheese (cheddar or a Mexican blend)
8 small flour or corn tortillas
1 tsp ground cumin
1 tsp chili powder
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, sauté the diced onion until translucent, about 5 minutes. Then add minced garlic and cook for another minute.
Add ground beef to the skillet, breaking it up with a wooden spoon. Season with cumin, chili powder, salt, and pepper. Cook until browned, about 7-10 minutes.
Stir in black beans and half of the enchilada sauce, and let simmer for a few minutes.
Grab a tortilla and spoon about ¼ cup of the meat mixture into the center, top with cheese, roll it up tightly and place in a greased baking dish. Repeat with remaining tortillas.
Pour remaining enchilada sauce over the top and add the rest of the shredded cheese.
Bake for about 20-25 minutes until cheese is bubbly and golden.
Sprinkle with fresh cilantro if desired before serving.
