Ingredients

1 tbsp butter
1.5 cups jasmine or white rice
3 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
0.5 cup cream cheese softened
0.5 cup grated Parmesan cheese
1 tbsp butter
salt and pepper to taste
1 tsp Italian seasoning
fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium-high heat. Season chicken bites with salt and black pepper, then add to the skillet and sear until golden brown, about 5-7 minutes.
- Add minced garlic and garlic powder to the skillet, cooking for an additional minute until fragrant.
- Stir in honey, soy sauce, apple cider vinegar, and butter, mixing well to combine. Let the sauce simmer for about 5 minutes until thickened.
- For the creamy rice, rinse the rice under cold water until the water runs clear, then combine with chicken broth in a saucepan and bring to a boil.
- Reduce heat, cover, and let simmer for about 15 minutes or until rice is cooked through.
- Stir in heavy cream, mozzarella cheese, cream cheese, Parmesan cheese, butter, salt, pepper, and Italian seasoning until the mixture is creamy and smooth.
- Serve the chicken bites over the creamy rice and garnish with fresh parsley.
