These Jello Meringue Cookies are a fun, fruity twist on classic meringues! With a crisp, airy texture and a burst of flavor from flavored gelatin, they’re a delightful treat that melts in your mouth.

- 3 large egg whites, room temperature
- ½ tsp cream of tartar
- ½ cup granulated sugar
- 3 tbsp Jello powder (any flavor)
- ½ tsp vanilla extract
Instructions
- Preheat oven to 225°F (110°C). Line a baking sheet with parchment paper.
- Whip the egg whites: In a clean, dry bowl, beat egg whites with cream of tartar using an electric mixer until soft peaks form.
- Add sugar & Jello powder: Gradually add sugar and Jello powder, one tablespoon at a time, while beating on high speed until stiff, glossy peaks form. Beat in vanilla extract.
- Pipe or scoop meringue onto the baking sheet using a piping bag or spoon.
- Bake for 1 ½ to 2 hours, or until the meringues are dry and crisp. Turn off the oven and let them cool inside for another hour.
- Enjoy! Store in an airtight container to keep them crisp.
Notes
- Use any Jello flavor for different colors and tastes!
- Make a swirl effect by using two colors of Jello powder.
- Store in a dry place to prevent them from getting sticky.
