1 lb ground beef or turkey
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 packet (1 oz) taco seasoning
8 corn tortillas
2 cups shredded cheese
Fresh cilantro, chopped
Salt and pepper to taste
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground meat until browned, about 5-7 minutes.
Stir in the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes.
Mix in the beans and corn, then add the diced tomatoes and taco seasoning. Simmer for about 5 minutes.
In a 9×13 inch baking dish, spread a layer of the meat mixture, followed by a layer of tortillas, and sprinkle cheese.
Repeat layering until you run out of ingredients, finishing with a layer of cheese on top.
Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
Let it cool for a few minutes, garnish with cilantro, serve and enjoy!
