1 cup orzo pasta
4 cups chicken broth
1 can (14.5 oz) diced tomatoes, undrained
½ tsp Italian seasoning
½ tsp red pepper flakes (optional)
Salt & pepper, to taste
2 cups fresh spinach
Parmesan cheese, for serving
Instructions
In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon—about 5-7 minutes.
Once the sausage is browned, add the diced onion, bell pepper, and minced garlic. Cook until softened, about 3-4 minutes, stirring often.
Stir in the orzo pasta and let it toast for a minute before adding the chicken broth, diced tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Stir everything together.
Bring everything to a simmer, then cover the pot and let it cook for 10-12 minutes, stirring occasionally, until the orzo is al dente.
