Description
Classic pineapple upside-down cake featuring caramelized pineapple rings and a moist, buttery cake base.
Ingredients
1/4 cup unsalted butter
2/3 cup packed brown sugar
8 pineapple rings, drained
Maraschino cherries (optional)
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1/2 cup milk
1/3 cup vegetable oil
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Melt butter in a 9-inch round cake pan.
2. Sprinkle brown sugar evenly over melted butter.
3. Arrange pineapple rings over brown sugar. Place cherries in the center of each ring if using.
4. In a large bowl, combine flour, sugar, baking powder, and salt.
5. In another bowl, whisk eggs, milk, oil, and vanilla.
6. Add wet ingredients to dry ingredients; stir until just combined.
7. Pour batter evenly over pineapple and brown sugar layer.
8. Bake 40-45 minutes until a toothpick inserted in the center comes out clean.
9. Let cake cool in pan 10 minutes; invert onto serving plate.
10. Serve warm or at room temperature.
Notes
Use fresh pineapple juice for extra flavor.
For a richer cake, substitute milk with coconut milk.
Serve with whipped cream or vanilla ice cream for indulgence.
