1 cup shelled pistachios (plus extra for garnish)
1 cup heavy whipping cream
1 cup mascarpone cheese
¾ cup powdered sugar
1 teaspoon vanilla extract
1 cup strong brewed coffee, cooled
¼ cup coffee liqueur (optional)
24 ladyfinger cookies
Pistachio crumbs or chopped pistachios for garnish
Instructions
In a food processor, pulse the shelled pistachios until they resemble fine crumbs. You don’t want to turn them into a paste, so keep an eye on it!
In a large mixing bowl, combine the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract. Using a hand mixer, whip until the mixture is thick and fluffy, about 3-5 minutes. Don’t overmix or it could become grainy.
Gently fold the ground pistachios into the cream mixture until well combined.
In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
Quickly dip each ladyfinger into the coffee mixture for just a second on each side. Lay them side by side in a 9×9-inch baking dish. Spread half of the pistachio cream mixture over the cookies.
Add another layer of dipped ladyfingers, followed by the remaining pistachio cream. Smooth it out beautifully with a spatula.
Cover with plastic wrap and chill in the refrigerator for at least 4 hours, or even overnight.
