2 cups of all-purpose flour
1 cup of unsalted butter, softened
½ cup of granulated sugar
1 large egg yolk
1 teaspoon of vanilla extract
½ teaspoon of salt
1 cup of fruit preserves (apricot, raspberry, or your favorite)
Powdered sugar for dusting
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg yolk and vanilla extract to the butter mixture and mix until well blended.
In another bowl, whisk together the flour and salt. Gradually add this mixture to the wet ingredients, stirring gently until a soft dough forms.
Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Roll out the chilled dough onto a floured surface to about ¼ inch thickness. Use a round cookie cutter to cut out circles.
Make a small indentation in the center of each cookie and spoon about a teaspoon of your chosen fruit preserves into each.
Bake for about 15-18 minutes, or until the edges start to turn a light golden brown.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar.
