Ingredients
2 lbs russet potatoes – peeled and cut into 1” cubes
4 cups chicken or vegetable broth
1 cup heavy cream or whole milk
2 tablespoon unsalted butter
1 medium yellow onion – diced
2 cloves garlic – minced
2 tablespoon all-purpose flour
4 strips thick-cut bacon – cooked until crispy chopped
1 cup sharp cheddar cheese – grated
½ cup sour cream – for topping
fresh chives or green onions – sliced for garnish
salt and black pepper – to taste

Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, cooking until soft and translucent.
- Stir in the flour and cook for 1-2 minutes to remove the raw flour taste.
- Add the cubed potatoes and broth, bringing the mixture to a boil. Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are tender, use a potato masher or immersion blender to puree the soup to your desired consistency.
- Stir in the heavy cream or milk, cooked bacon, and cheddar cheese until melted and combined. Season with salt and pepper to taste.
- Serve hot, topped with sour cream and garnished with chives or green onions.
Notes
For a thicker soup, blend longer or add less broth. Feel free to add vegetables like celery or carrots for extra flavor.
