1 lb (450g) large prawns, peeled and deveined
2 tablespoons vegetable oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
1–2 green chilies, slit
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1 can (14 oz) coconut milk
Salt to taste
Fresh cilantro for garnish
Juice of 1 lime (optional)
Instructions
In a large skillet or wok, heat up the vegetable oil over medium heat. Once hot, add the chopped onion and sauté until it's translucent and starting to brown.
Add the minced garlic, grated ginger, and slit green chilies. Stir everything together for about a minute until those lovely aromas fill your kitchen.
Sprinkle in the ground cumin, coriander, and turmeric powder. Stir and let the spices cook for another minute.
Pour in the coconut milk, stir well to combine, and bring it to a gentle simmer.
Add the prawns to the pan, stirring them gently to coat in the sauce. Allow them to cook for about 3-5 minutes until they turn pink and opaque.
Season with salt to taste, and add lime juice if desired. Give it one last stir, and serve.
