1 lb (450g) baby potatoes, halved or quartered depending on size
4 cups fresh spinach, washed and roughly chopped
1 medium onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, grated
2 green chilies, slit
1 teaspoon cumin seeds
1 teaspoon coriander powder
½ teaspoon turmeric powder
Salt to taste
2 tablespoons vegetable oil or ghee
1 tablespoon lemon juice
Wash your potatoes thoroughly and halve or quarter them.
In a large skillet, heat the vegetable oil and add cumin seeds. Allow to sizzle for 30 seconds.
Add finely chopped onions, stirring until translucent and caramelized (5-7 minutes).
Add garlic, ginger, and green chilies, cooking for 2-3 minutes until aromatic.
Sprinkle in coriander powder, turmeric, and salt, mixing well for about a minute.
Add prepared potatoes, coating them in the spice mixture. Pour in a splash of water, cover, and simmer for 10-15 minutes until tender.
Once the potatoes are tender, add the spinach and cover, cooking for around 5 minutes.
Stir in lemon juice, taste, and adjust seasoning as needed.
Serve warm and enjoy.
