  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons vegetable oil or ghee
  • 1 tablespoon lemon juice

  • Instructions

  • Wash your potatoes thoroughly and halve or quarter them.
  • In a large skillet, heat the vegetable oil and add cumin seeds. Allow to sizzle for 30 seconds.
  • Add finely chopped onions, stirring until translucent and caramelized (5-7 minutes).
  • Add garlic, ginger, and green chilies, cooking for 2-3 minutes until aromatic.
  • Sprinkle in coriander powder, turmeric, and salt, mixing well for about a minute.
  • Add prepared potatoes, coating them in the spice mixture. Pour in a splash of water, cover, and simmer for 10-15 minutes until tender.
  • Once the potatoes are tender, add the spinach and cover, cooking for around 5 minutes.
  • Stir in lemon juice, taste, and adjust seasoning as needed.
  • Serve warm and enjoy.
