These easy shrimp rice bowls combine juicy, seasoned shrimp, fluffy rice, crunchy veggies, and a creamy spicy mayo for a quick and satisfying meal that’s perfect any day of the week.
Ingredients
**For the Shrimp:**
1 pound shrimp, peeled and deveined
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
**For the Spicy Mayo:**
1/4 cup mayonnaise
1 tablespoon sriracha (adjust to taste)
1 teaspoon lime juice
**For the Bowls:**
2 cups cooked white or brown rice
1/2 cup shredded carrots
1/2 cucumber, thinly sliced
1 avocado, sliced
1 tablespoon chopped green onions
1 teaspoon sesame seeds (optional)
Instructions
1. In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
2. Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until opaque and cooked through. Remove from heat.
3. In a small bowl, whisk mayonnaise, sriracha, and lime juice until smooth.
4. Divide rice between 4 bowls. Top with shrimp, carrots, cucumber, avocado, and green onions.
5. Drizzle with spicy mayo and sprinkle with sesame seeds if desired.
6. Serve immediately.
Notes
Use frozen cooked shrimp for quicker prep—just thaw and season.
Add pickled ginger or edamame for extra flavor.
Use quinoa or cauliflower rice for a low-carb version.
