2 sheets of puff pastry
2 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon cornstarch
1/2 teaspoon vanilla extract
1 egg, beaten (for egg wash)
1 cup powdered sugar
1–2 tablespoons milk (to thin the icing)
Optional: sprinkle of cinnamon
In a bowl, combine the sliced strawberries, granulated sugar, cornstarch, and vanilla extract. Let sit for about 10 minutes.
Preheat your oven to 400°F (200°C).
On a floured surface, roll out the puff pastry sheets to about 1/8-inch thickness.
Slice each sheet into rectangles, about 3×5 inches.
Spoon about 1 tablespoon of the strawberry mixture onto the center of each rectangle.
Fold the pastry over the filling to create a pocket and seal the edges with a fork.
Brush the tops of each strudel with the beaten egg.
Place the strudels on a lined baking sheet and bake for about 15-20 minutes until golden brown.
While baking, whisk together the powdered sugar and milk until you achieve a drizzle-worthy consistency.
Once baked, let them cool for a few minutes, then drizzle the sweet icing over the warm pastries.
