Description

Ingredients

  • 2 cups cherry tomatoes, halved

  • 1 large cucumber, sliced

  • ¼ red onion, thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon dried oregano

  • Salt & pepper, to taste

  • Optional: fresh parsley or feta cheese


Instructions

  • Combine vegetables: In a large bowl, mix tomatoes, cucumber, and red onion.

  • Make dressing: Whisk olive oil, vinegar, oregano, salt, and pepper in a small bowl.

  • Toss & chill: Pour dressing over salad and toss gently. Let sit 5–10 minutes.

  • Serve: Top with fresh parsley or crumbled feta, if desired.

Notes

  • Use English cucumbers or Persian cucumbers for fewer seeds.

  • Add kalamata olives or avocado for a Mediterranean twist.

  • Best served fresh but can be chilled up to 1 day in advance.
