This light and refreshing salad combines juicy tomatoes and crisp cucumbers with a zesty vinaigrette. It’s perfect as a side dish for any summer meal or light lunch on its own.
Ingredients

2 cups cherry tomatoes, halved

1 large cucumber, sliced

¼ red onion, thinly sliced

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt & pepper, to taste

Optional: fresh parsley or feta cheese
Instructions

Combine vegetables: In a large bowl, mix tomatoes, cucumber, and red onion.

Make dressing: Whisk olive oil, vinegar, oregano, salt, and pepper in a small bowl.

Toss & chill: Pour dressing over salad and toss gently. Let sit 5–10 minutes.

Serve: Top with fresh parsley or crumbled feta, if desired.
