Description

Rich, creamy, and full of flavor, this Tuscan-inspired ravioli dish is a 30-minute weeknight winner packed with sun-dried tomatoes, spinach, and cheesy goodness.

Ingredients

Scale
  • 1 (20 oz) package cheese ravioli (fresh or frozen)

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • ½ cup sun-dried tomatoes, chopped

  • 2 cups fresh baby spinach

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • Salt & pepper, to taste

  • Optional: red pepper flakes for a kick

Instructions

  • Cook ravioli: Boil ravioli according to package directions. Drain and set aside.

  • Make sauce: In a large skillet, heat olive oil over medium heat. Sauté garlic and sun-dried tomatoes for 1–2 minutes.

  • Add spinach & cream: Stir in spinach and cook until wilted. Pour in cream and Parmesan, stirring until melted and creamy. Season with Italian seasoning, salt, pepper, and red pepper flakes if using.

  • Combine: Add cooked ravioli to the skillet and gently toss to coat. Cook for 2–3 more minutes until everything is warmed through.

  • Serve: Garnish with extra Parmesan or basil if desired.

Notes

  • You can use frozen spinach if fresh isn’t available (just squeeze out excess water).

  • Add cooked chicken or shrimp for a heartier meal.

  • Store leftovers in an airtight container for up to 3 days.
