Ingredients

  • 2 cups cooked and cooled rice (preferably day-old)
  • 2 eggs, beaten
  • 1 tbsp sesame oil (or vegetable oil)
  • 2 cloves garlic, minced
  • ½ cup frozen peas and carrots
  • 2 green onions, chopped
  • 3 tbsp soy sauce
  • 1 tsp oyster sauce (optional)
  • ½ tsp black pepper
  • ½ tsp sesame seeds (for garnish, optional)

Instructions

  • Heat ½ tbsp oil in a pan over medium heat. Scramble the eggs, then set aside.
  • Add the remaining oil, garlic, and vegetables to the pan. Sauté for 2 minutes.
  • Add rice, breaking up any clumps, and stir-fry for 3-4 minutes.
  • Pour in soy sauce, oyster sauce (if using), and black pepper. Mix well.
  • Stir in scrambled eggs and green onions. Cook for another minute.
  • Garnish with sesame seeds and serve hot.

Notes

  • Use jasmine or basmati rice for the best texture.
  • Add shrimp, chicken, or tofu for extra protein.
  • For a spicy kick, drizzle with sriracha or chili oil.
