- 2 cups cooked and cooled rice (preferably day-old)
- 2 eggs, beaten
- 1 tbsp sesame oil (or vegetable oil)
- 2 cloves garlic, minced
- ½ cup frozen peas and carrots
- 2 green onions, chopped
- 3 tbsp soy sauce
- 1 tsp oyster sauce (optional)
- ½ tsp black pepper
- ½ tsp sesame seeds (for garnish, optional)
Instructions
- Heat ½ tbsp oil in a pan over medium heat. Scramble the eggs, then set aside.
- Add the remaining oil, garlic, and vegetables to the pan. Sauté for 2 minutes.
- Add rice, breaking up any clumps, and stir-fry for 3-4 minutes.
- Pour in soy sauce, oyster sauce (if using), and black pepper. Mix well.
- Stir in scrambled eggs and green onions. Cook for another minute.
- Garnish with sesame seeds and serve hot.
Notes
- Use jasmine or basmati rice for the best texture.
- Add shrimp, chicken, or tofu for extra protein.
- For a spicy kick, drizzle with sriracha or chili oil.
