1 ½ cups of eggnog
3 large eggs
2 tablespoons of sugar
1 teaspoon of vanilla extract
1 tablespoon of melted butter
½ teaspoon of ground nutmeg
¼ teaspoon of salt
Instructions
In a large bowl, whisk together the flour, sugar, nutmeg, and salt.
In a separate bowl, whisk the eggs, then add the eggnog, melted butter, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
Let the batter sit for about 30 minutes in the fridge.
Heat a non-stick skillet or crepe pan over medium heat and lightly brush with melted butter.
Pour about ¼ cup of batter into the center of the skillet, swirl to spread evenly, and cook for about 1-2 minutes until the edges lift.
Carefully flip and cook the other side for another 30 seconds. Transfer to a plate and keep warm.
Repeat the process with the remaining batter, adding more melted butter as needed.
