- ½ cup pizza sauce (or salsa for a twist)
- ½ cup cooked breakfast sausage or bacon, crumbled
- 4 large eggs, scrambled
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella (optional)
- 1 tbsp butter (for eggs)
- 1 tsp Italian seasoning (optional)
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat Oven:
- Set oven to 375°F (190°C).
- Toast the Muffins:
- Place English muffins on a baking sheet and lightly toast for 3-4 minutes.
- Cook the Eggs:
- In a skillet, melt butter over medium heat. Scramble the eggs until just set.
- Assemble the Pizzas:
- Spread pizza sauce over each muffin half.
- Add scrambled eggs, cooked sausage or bacon, and shredded cheese.
- Sprinkle with Italian seasoning.
- Bake & Serve:
- Bake for 6-8 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley and serve warm.
