Ingredients

4 cups corn kernels (fresh or frozen)

½ cup mayonnaise

½ cup crumbled cotija cheese

Instructions

Heat butter in a skillet over medium heat. Add corn and cook until lightly charred, about 8–10 minutes.

Remove from heat and stir in mayonnaise, cotija cheese, chili powder, and lime juice.
