2 cups of fresh spinach, roughly chopped
1 cup of crumbled feta cheese (use Greek feta for the best flavor)
4 large eggs
1/2 cup of heavy cream (or milk for a lighter option)
1/2 cup of onion, finely diced
2 cloves of garlic, minced
1 teaspoon of dried oregano
Salt to taste
Pepper to taste
1 cup of breadcrumbs (for a crunchy topping)
2 tablespoons of olive oil (or melted butter)
Optional: a pinch of nutmeg for a warm, earthy flavor
Instructions
Preheat your oven to 350°F (175°C).
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and sauté until they’re translucent, about 5 minutes. Toss in the minced garlic and cook for an additional minute until fragrant.
Slowly mix in the chopped spinach, allowing it to wilt, which takes about 3-4 minutes. Once wilted, remove it from the heat and let it cool slightly.
In a medium bowl, whisk together the eggs, heavy cream, oregano, salt, and pepper until combined. Add a pinch of nutmeg if desired.
In a large mixing bowl, combine the sautéed spinach mixture with the egg mixture and crumbled feta. Stir gently to combine.
Grease an 8×8 baking dish with 1 tablespoon of olive oil. Pour the mixture into the dish, even it out, and sprinkle the breadcrumbs on top.
Bake for 30-35 minutes or until the top is golden and the edges are bubbly.
