Ingredients
1 Tablespoon sesame oil
2 Tablespoons sesame seeds
1 cup Jasmine rice
1 cup full fat coconut milk
3/4 cup water
1/4 cup panko breadcrumbs
1/4 cup milk
1 lb ground beef
4 scallions
2 teaspoons fresh grated ginger
4 cloves minced garlic
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
3 tablespoons olive oil
1 lb fresh green beans
1/4 cup Mayo
1/4 cup sour cream
2 Tablespoons Sriracha
3 Tablespoons coconut aminos
1 Tablespoon Honey
2 teaspoons rice vinegar
Red chili flakes
Instructions
- Preheat the oven to 400°F (200°C).
- In a medium pot, heat the sesame oil over medium heat. Add the sesame seeds and toast until golden.
- Add the rinsed Jasmine rice to the pot, stirring to coat in oil. Pour in coconut milk and water, then bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes until rice is tender and liquid is absorbed.
- In a large bowl, combine panko, milk, ground beef, 2 sliced scallions, ginger, garlic, salt, and red pepper flakes. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Bake the meatballs for 20 minutes, or until cooked through and browned.
- While the meatballs are baking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the green beans and sauté until tender-crisp.
- For the firecracker sauce, whisk together mayo, sour cream, Sriracha, coconut aminos, honey, rice vinegar, and red chili flakes in a bowl.
- Serve the meatballs over coconut rice, with sautéed green beans on the side and the firecracker sauce drizzled on top.
Notes
For a spicy kick, adjust the amount of Sriracha in the sauce according to your preference. Use gluten-free breadcrumbs for a gluten-free option.
