  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon soy sauce
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt

  • Instructions

  • In a large bowl, combine ground meat, breadcrumbs, parsley, garlic, egg, soy sauce, ginger, paprika, red pepper flakes, salt, and pepper. Mix gently until just combined.
  • Preheat your oven to 400°F (200°C). Scoop about a tablespoon of the mixture and roll it into a ball. Place them on a lined baking sheet. Bake for 15-20 minutes until golden.
  • In a small bowl, combine sweet chili sauce, sriracha, and soy sauce. Taste and adjust the heat if needed.
  • Once the meatballs are cooked, take them out of the oven and toss them in the firecracker sauce until well coated. Optionally bake for another 5 minutes.
  • In a pot, combine jasmine rice, coconut milk, water, lime juice, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender.
