1 egg, beaten

Instructions
In a large bowl, whisk together the flour, salt, and sugar. Add the chilled butter and work it into the flour until the mixture resembles coarse crumbs.
Slowly add the cold water, a tablespoon at a time, until the dough comes together. Don’t overmix.
Form the dough into a disk, wrap it in plastic wrap, and chill for at least 1 hour.
In a bowl, mix the almond paste with the almond extract until smooth. Set aside.
Roll out the dough on a floured surface into a rectangle, about ¼ inch thick.
Spread the almond filling evenly over the dough, leaving about an inch border.
Starting from one short side, roll the dough into a log shape and pinch the ends to seal.
