  • 4 cod fillets (about 6 oz. each)
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 can (14 oz.) of diced tomatoes, undrained
  • 1 lemon (zested and juiced)
  • 4 tablespoons of unsalted butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish
  • Optional: a pinch of red pepper flakes

  • Instructions

  • Pat the cod fillets dry with a paper towel, then sprinkle them with salt and pepper.
  • In a large skillet, heat the olive oil over medium heat.
  • Carefully place the cod fillets into the hot oil. Cook for about 4 minutes on one side.
  • Gently turn the cod fillets over to the other side and cook for another 3-4 minutes until fully cooked through.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds.
  • Throw in the canned diced tomatoes (with their juices) and bring to a simmer. Stir in the lemon zest and juice, and let it bubble away for about 5 minutes.
  • Lower the heat and add the unsalted butter. Stir it in until melted and well combined.
  • Gently return the cod fillets back to the pan, spooning some of the sauce over the top. Let it warm through for another minute.
