Ingredients

4 cod fillets (about 6 oz. each)
2 tablespoons of olive oil
3 cloves of garlic, minced
1 can (14 oz.) of diced tomatoes, undrained
1 lemon (zested and juiced)
4 tablespoons of unsalted butter
Salt and black pepper to taste
Fresh parsley, chopped for garnish
Optional: a pinch of red pepper flakes
Instructions
Pat the cod fillets dry with a paper towel, then sprinkle them with salt and pepper.
In a large skillet, heat the olive oil over medium heat.
Carefully place the cod fillets into the hot oil. Cook for about 4 minutes on one side.
Gently turn the cod fillets over to the other side and cook for another 3-4 minutes until fully cooked through.
In the same skillet, add the minced garlic and sauté for about 30 seconds.
Throw in the canned diced tomatoes (with their juices) and bring to a simmer. Stir in the lemon zest and juice, and let it bubble away for about 5 minutes.
Lower the heat and add the unsalted butter. Stir it in until melted and well combined.
Gently return the cod fillets back to the pan, spooning some of the sauce over the top. Let it warm through for another minute.
