Ingredients
1 sheet of puff pastry (thawed if frozen)
2 cups fresh spinach (or 1 cup frozen spinach
thawed and drained)
1 cup crumbled feta cheese
1/2 cup ricotta cheese (optional for creaminess)
1 small onion
finely chopped
2 cloves garlic
minced
1 egg (for egg wash)
Salt and pepper to taste
Olive oil (for sautéing)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the fresh spinach (or thawed frozen spinach) to the skillet and cook until wilted. Season with salt and pepper. Let it cool slightly.
- In a mixing bowl, combine the cooked spinach mixture with crumbled feta and ricotta cheese (if using).
- Roll out the puff pastry on a floured surface and cut into squares.
- Place a spoonful of the spinach and cheese mixture in the center of each pastry square. Fold the pastry over and seal the edges with a fork.
- Brush the tops with beaten egg for a golden finish.
- Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
