1 tablespoon of olive oil
4 boneless, skinless chicken thighs (or breasts)
1 teaspoon of salt (or to taste)
1/2 teaspoon of black pepper
1 teaspoon of paprika
1/2 teaspoon of garlic powder
1 medium onion, diced
2 cloves of garlic, minced
1 bell pepper, chopped
1 cup of long-grain rice
2 cups of chicken broth
1 cup of frozen peas
1 tablespoon of soy sauce
1 teaspoon of dried thyme or Italian seasoning
Instructions
Prep your ingredients: Gather everything beforehand. Chop your veggies and season the chicken.
Sauté the chicken: In your pressure cooker, heat the olive oil over medium heat. Add the seasoned chicken to the pot and brown for about 3-4 minutes on each side.
Cook the aromatics: In the same pot, add the onion and garlic. Stir for about 2-3 minutes until translucent.
Add the veggies: Stir in the chopped bell pepper and cook for another minute.
Add rice and broth: Stir in the rice, then pour in the chicken broth, add peas, soy sauce, thyme, and the chicken back to the pot.
Pressure cook: Seal the lid and cook on high pressure for 10 minutes.
Release and fluff: Allow for a natural release for 5 minutes, then do a quick release. Open the lid and fluff the rice with a fork.
