4 boneless, skinless chicken breasts (about 2 pounds)
2 cups low-sodium chicken broth
1 cup long-grain white rice (or jasmine)
1 small onion, diced
3 cloves fresh garlic, minced
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup pesto
1/4 cup grated Parmesan cheese, for serving
Fresh parsley or basil for garnish (optional)
Season the chicken breasts with salt, pepper, paprika, and oregano.
In the crockpot, place the diced onion at the bottom. Lay the seasoned chicken on top of the onions.
Sprinkle the rice evenly over the chicken.
Gently pour the chicken broth over the rice and chicken.
Sprinkle the minced garlic over everything.
Cover the crockpot and set it on low for 6-7 hours or high for 3-4 hours.
About 20 minutes before serving, take the lid off and gently stir in the pesto.
Once cooked, fluff the rice with a fork and mix in the chicken. Serve warm, topped with Parmesan cheese and fresh herbs.
