Instructions

Cook the Bacon:
- In a large skillet over medium heat, cook the chopped bacon until crispy (5-7 minutes).
- Remove the bacon with a slotted spoon and set it aside. Leave about 2 tbsp of bacon grease in the pan.

Sauté the Onion & Garlic:
- In the same skillet, add the diced onion and cook until softened (3 minutes).
- Add the minced garlic and sauté for another 30 seconds until fragrant.

Cook the Cabbage:
- Add the chopped cabbage to the skillet and toss to coat it in the bacon grease.
- Season with smoked paprika, salt, black pepper, and red pepper flakes (if using).
- Cook over medium heat, stirring occasionally, until the cabbage is tender and slightly caramelized (10-12 minutes).

- Stir in the cooked bacon and apple cider vinegar (if using).
