1 head of green cabbage, chopped (about 4–5 cups)
1 pound ground beef (or ground turkey for a leaner option)
1 medium onion, diced
2 cloves of fresh garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) pinto beans, drained and rinsed
1 cup corn kernels
1 packet taco seasoning
Salt and pepper to taste
2 cups Fritos corn chips
2 cups shredded cheddar cheese
In a large skillet over medium heat, cook the ground beef and onion until browned.
Add minced garlic and cook for an additional minute.
Stir in chopped cabbage until wilted.
