This Frittata Recipe is quick to prepare, cheesy, and loaded with a variety of fresh vegetables, making it a hearty meal any time of day.
Ingredients

4 slices bacon (or 2 Tablespoons olive oil for vegetarian)
½ cup onion (diced)
1 teaspoon minced garlic
4 cups vegetables (bell peppers
broccoli
zucchini
etc.)
10 eggs
¼ cup whole milk
½ teaspoon fine sea salt
¼ teaspoon freshly ground black pepper
¼ teaspoon paprika
1 cup shredded Cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy. Remove and crumble, or use olive oil for vegetarian version.
- In the same skillet, sauté the onion and garlic until translucent.
- Add the chopped vegetables and cook for another 5 minutes until softened.
- In a bowl, whisk together the eggs, milk, salt, pepper, and paprika.
- Stir in the cooked veggies, bacon (or olive oil), and Cheddar cheese.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until the frittata is set and golden on top.
- Allow to cool slightly before slicing and serving.
Notes
Feel free to use any combination of vegetables you have on hand. This frittata can be served warm or at room temperature.
