Ingredients

2 boneless, skinless chicken breasts

1 tbsp olive oil

1 lb baby potatoes, halved

4 cloves garlic, minced

½ cup chicken broth

4 tbsp unsalted butter

1 tbsp fresh thyme or rosemary (optional)

Fresh parsley, for garnish
Instructions

Cook the potatoes: Heat olive oil in a large skillet over medium-high heat. Add halved potatoes, season with salt and pepper, and cook until golden and tender (about 10–12 minutes), stirring occasionally. Remove potatoes from the skillet and set aside.

Cook the chicken: Season chicken breasts with salt and pepper. In the same skillet, add more oil if needed and cook chicken until browned and cooked through (about 6–7 minutes per side). Remove and set aside.

Make the garlic butter sauce: In the same skillet, lower heat and add garlic, cooking for 1 minute until fragrant. Add chicken broth and let it reduce by half (about 2–3 minutes).

Combine: Add butter to the skillet, stirring until melted. Return potatoes and chicken to the skillet. Stir to coat everything in the garlic butter sauce. If using herbs, add them now.

Serve: Garnish with fresh parsley and serve warm.
