Ingredients

  • 8 oz spaghetti or linguine
  • 1 lb shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup chicken broth or white wine
  • Juice of 1 lemon
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

1️⃣ Cook pasta according to package instructions until al dente. Drain and set aside.
2️⃣ In a large skillet, heat olive oil and 1 tbsp butter over medium heat. Add shrimp, salt, and pepper. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet.
3️⃣ In the same skillet, melt the remaining butter. Add garlic and red pepper flakes, sauté for 1 minute until fragrant.
4️⃣ Pour in chicken broth (or white wine) and lemon juice, scraping up any bits from the pan. Let simmer for 2 minutes.
5️⃣ Add cooked pasta and shrimp back to the skillet, tossing to coat in the sauce. Stir in Parmesan and parsley.
6️⃣ Serve warm with extra Parmesan and a squeeze of lemon.
