    • 2 garlic cloves, minced

    • 1/2 tsp salt
    • 1/4 tsp black pepper
  • For the Sauce & Zucchini Noodles:
    • 3 medium zucchinis, spiralized
    • 3 tbsp butter
    • 4 garlic cloves, minced
    • 1/4 cup chicken broth
    • 1/4 tsp red pepper flakes (optional)
    • Salt and pepper to taste
    • 1 tbsp fresh lemon juice
    • 1 tbsp olive oil

Instructions

  • Prepare Meatballs: In a large bowl, mix ground turkey, Parmesan, breadcrumbs, egg, garlic, parsley, salt, and pepper. Form into 1-inch meatballs.
  • Cook Meatballs: Heat olive oil in a skillet over medium heat. Cook meatballs for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from skillet and set aside.
  • Make Garlic Butter Sauce: In the same skillet, melt butter over medium heat. Add garlic and sauté until fragrant. Stir in chicken broth, red pepper flakes, lemon juice, salt, and pepper. Simmer for 2-3 minutes.
  • Cook Zucchini Noodles: Add zucchini noodles to the skillet and toss to coat in the sauce. Cook for 2-3 minutes until slightly tender.
  • Combine: Return meatballs to the skillet, tossing gently to coat with the sauce.
  • Serve: Plate the zucchini noodles and meatballs, spooning extra sauce over the top.

  • For extra creaminess, add a splash of heavy cream or a dollop of cream cheese to the sauce.
  • Use pre-spiralized zucchini to save time.
