This Garlic Cauliflower Mushroom Skillet is a quick and delicious dish that brings together the earthy flavors of cauliflower and mushrooms, enhanced by the aromatic garlic and fresh herbs. Perfect as a side or a main dish!
Ingredients
1 medium head of cauliflower
cut into small florets
8 ounces of mushrooms
sliced (I prefer cremini or button mushrooms)
4 cloves of garlic
minced
2 tablespoons of olive oil
1 tablespoon of butter (optional for extra richness)
1 teaspoon of dried thyme (or 1 tablespoon of fresh thyme)
Salt and pepper to taste
1 tablespoon of lemon juice (freshly squeezed)
Fresh parsley
chopped (for garnish)
Instructions
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the cauliflower florets and sauté for about 5 minutes until they start to soften.
- Stir in the sliced mushrooms and cook for another 5-7 minutes until the mushrooms are tender.
- Add the minced garlic and thyme, and continue to cook for another 2-3 minutes until fragrant.
- Season with salt, pepper, and lemon juice, then toss to combine.
- Garnish with fresh parsley before serving.
Notes
For added flavor, you can sprinkle some grated Parmesan cheese on top before serving.
