1 medium head of cauliflower, chopped into florets
8 ounces of mushrooms, sliced
4 cloves of garlic, minced
2 tablespoons of olive oil
1 teaspoon of dried thyme
Salt and pepper, to taste
¼ teaspoon of red pepper flakes (optional)
Fresh parsley, chopped for garnish
Instructions
Prep the veggies: Start by washing the cauliflower and mushrooms. Chop the cauliflower into bite-sized florets and slice up the mushrooms. Mince the garlic.
Heat the olive oil in a large skillet over medium heat until hot but not smoking.
Add the cauliflower florets and sauté for about 5-7 minutes until they start to get golden.
Once the cauliflower is slightly tender, add in the sliced mushrooms and stir occasionally for another 4-5 minutes until they soften.
Add the minced garlic, thyme, salt, pepper, and red pepper flakes if using. Sauté for an additional 1-2 minutes until fragrant.
Taste and adjust seasoning if needed. Optionally, add a squeeze of lemon juice and sprinkle chopped parsley over the top before serving.
