4 boneless, skinless chicken breasts
4 cloves of garlic, minced
1 teaspoon dried Italian herbs
Salt and pepper, to taste
3 tablespoons olive oil
1 tablespoon lemon juice
2 pounds russet potatoes, peeled and diced
1/2 cup milk
4 tablespoons butter
1 pound baby carrots
2 tablespoons butter
2 tablespoons honey
Instructions
In a bowl, mix together minced garlic, Italian herbs, olive oil, lemon juice, salt, and pepper. Add the chicken breasts, making sure they're well-coated. Let it marinate for at least 15 minutes.
Preheat your oven to 375°F (190°C). Heat a large oven-safe skillet over medium-high heat. Add a bit of olive oil and carefully place the marinated chicken in the skillet. Sear for about 4-5 minutes on each side.
Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
While the chicken is baking, bring a pot of salted water to boil and add the diced potatoes. Cook until fork-tender, around 15-20 minutes. Drain and return to the warm pot.
Add butter and milk to the potatoes. Mash until smooth and season with salt and pepper.
In a separate pan, melt butter over medium heat. Add the carrots, honey, salt, and pepper. Cook for about 10-15 minutes until the carrots are tender.
Once everything is cooked, plate your garlic herb chicken alongside a scoop of creamy mashed potatoes and glazed carrots.
