Juicy chicken thighs are seared to perfection and simmered in a zesty garlic lemon sauce—simple to prepare and packed with bold flavor!
Ingredients

6 bone-in, skin-on chicken thighs

1 tbsp olive oil

4 garlic cloves, minced

Juice and zest of 1 lemon

½ cup chicken broth

2 tbsp unsalted butter

1 tsp dried oregano or thyme

Salt and pepper, to taste

Lemon slices and fresh parsley (for garnish)
Instructions

Season chicken with salt, pepper, and oregano.

Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 5–7 minutes until golden. Flip and cook another 3–4 minutes. Remove and set aside.

In the same skillet, reduce heat and add garlic. Cook for 1 minute until fragrant.

Stir in lemon juice, zest, and chicken broth. Simmer 2 minutes, scraping up browned bits.

Return chicken to skillet. Cover and simmer for 15–20 minutes until cooked through.

Uncover, stir in butter, and spoon sauce over the chicken. Garnish with lemon slices and parsley.

For extra crispiness, finish under the broiler for 2–3 minutes.

Serve with rice, mashed potatoes, or roasted veggies.
