1 medium head of cauliflower, cut into small florets
8 oz mushrooms, sliced (button or cremini work wonderfully)
4 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons butter (or vegan substitute)
1 teaspoon dried thyme (or fresh)
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional)
Fresh parsley, chopped (for garnish)
Heat the Olive Oil: In a large skillet over medium heat, add the olive oil. Allow it to heat up for about a minute.
