Indulge in this delicious Garlic Mushroom Grilled Cheese, where earthy mushrooms meet savory garlic and two types of melted cheese, all grilled to perfection between slices of sourdough bread.
Ingredients
1 tbsp olive oil
250g (½lb) mushrooms sliced
2 tbsp butter
2 garlic cloves crushed
½ tsp chili flakes (optional)
1 tsp dried oregano
1 tsp lemon juice
Salt and pepper to taste
8 slices sourdough bread
1 cup mozzarella cheese grated
1 cup mature or sharp cheddar cheese grated
Extra butter for grilling
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes.
- Stir in butter, crushed garlic, chili flakes, oregano, lemon juice, salt, and pepper. Cook for another 2-3 minutes until fragrant.
- Remove the mushroom mixture from heat and set aside.
- On one slice of sourdough bread, layer the mozzarella and cheddar cheese. Add a generous amount of the mushroom mixture on top.
- Top with another slice of sourdough bread. Spread extra butter on the outside of each sandwich.
- Grill in a skillet on medium heat for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.

Notes
Feel free to add extra veggies or switch up the cheese according to your preference. For a spicier kick, increase the chili flakes.
