Ingredients
2 pieces boneless
skinless chicken breasts
3 cups baby potatoes quartered
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
3 cloves garlic minced
1/2 cup heavy cream
1/4 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 tbsp chopped parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Season the chicken breasts with garlic powder, paprika, salt, and black pepper.
- Cook the chicken in the skillet for about 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add the quartered baby potatoes and cook until they are tender, about 15 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add the Parmesan and mozzarella cheese, mixing until melted and creamy.
- Return the chicken to the skillet, coating it with the sauce.
- Garnish with chopped parsley before serving.
