- 1 lb ground chicken
- ½ cup breadcrumbs (panko or Italian-style)
- ¼ cup grated Parmesan cheese
- 1 egg, beaten
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp milk
- 1 tbsp olive oil
- ¼ cup shredded mozzarella (for topping, optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, pepper, and milk until well combined.
- Shape mixture into four mini meatloaves and place on the baking sheet.
- Drizzle with olive oil and bake for 20 minutes.
- If using mozzarella, sprinkle on top and bake for another 5 minutes until melted.
- Let rest for a few minutes before serving.

- Serve with roasted veggies or mashed potatoes for a complete meal.
- Swap ground chicken for turkey for a leaner option.
