Description

These Garlic Parmesan Chicken Meatloaves are a fun and flavorful twist on traditional meatloaf! Made with ground chicken, garlic, Parmesan cheese, and Italian herbs, they’re juicy, cheesy, and perfect for a weeknight dinner.


Ingredients

  • 1 lb (450 g) ground chicken
  • ½ cup (50 g) grated Parmesan cheese
  • ½ cup (50 g) breadcrumbs (or panko)
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • ¼ cup (60 ml) milk
  • 1 tbsp olive oil (for brushing)

For the Topping:

  • ½ cup (50 g) shredded mozzarella cheese
  • 2 tbsp melted butter
  • 1 clove garlic (minced)
  • 1 tbsp fresh parsley (chopped)

Instructions

  • Preheat & Prepare:

    • Preheat oven to 375°F (190°C).
    • Line a baking sheet with parchment paper.
  • Make the Meatloaf Mixture:

    • In a bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, pepper, Worcestershire sauce, and milk.
    • Mix until just combined—don’t overmix!
  • Shape & Bake:

    • Form the mixture into 4 mini meatloaves and place them on the baking sheet.
    • Brush each with olive oil and bake for 20-25 minutes, or until cooked through.
  • Add Topping & Finish:

    • Mix melted butter, garlic, and parsley.
    • Brush over meatloaves, sprinkle with mozzarella, and broil for 2-3 minutes until golden.
  • Serve & Enjoy:

    • Let rest for a few minutes, then serve with mashed potatoes or a fresh salad!

Notes

  • Swap chicken for turkey for a leaner option.
  • Add a kick by mixing red pepper flakes into the meat mixture.
  • Make it low-carb by using almond flour instead of breadcrumbs.
