2 large sweet potatoes (about 1 ½ pounds)
3 tablespoons of olive oil
4 cloves of fresh garlic, minced
½ teaspoon of paprika
½ teaspoon of ground black pepper
1 teaspoon of sea salt
½ cup of grated Parmesan cheese
Fresh parsley or chives, chopped (for garnish)
Preheat your oven to 425°F (220°C).
Wash and cut your sweet potatoes into wedges, aiming for about ¼ to ½ inch in thickness.
