1 cup garlic scapes, chopped (about 20–25 scapes)
½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)
½ cup nuts (pine nuts, walnuts, or almonds)
½ cup olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Rinse your garlic scapes thoroughly under cold water to get rid of any dirt. Trim off the ends and chop them into smaller pieces for easier blending.
In a food processor, combine your chopped scapes, nuts, and Parmesan cheese. Pulse until coarsely chopped.
With the processor running, slowly drizzle in the olive oil and scrape down the sides of the bowl as needed.
Add the lemon juice and salt and pepper to taste. Give it a final quick pulse to combine all the flavors.
Transfer it to a jar and drizzle a thin layer of olive oil on top to preserve freshness. Store in the fridge.
