1 medium spaghetti squash (about 3–4 pounds)
1 lb large shrimp, peeled and deveined
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon red pepper flakes
Salt, to taste
Pepper, to taste
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
Instructions
Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, sprinkle salt and pepper on the flesh, then place cut-side down on a baking sheet. Roast for 35-45 minutes until tender.
While the squash is roasting, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
Add shrimp, season with red pepper flakes, and stir-fry for 3-4 minutes until shrimp turn pink. Season with salt, pepper, and a squeeze of lemon juice before removing from heat.
Once cooked, turn the spaghetti squash cut-side up and use a fork to scrape out the strands resembling spaghetti.
Toss the shredded spaghetti squash with the garlic shrimp mixture until well combined. Adjust seasoning and drizzle with olive oil if desired.
Garnish with chopped fresh parsley and serve immediately.
