  • 2 tablespoons olive oil

  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

  • Instructions

  • Preheat your oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil, sprinkle salt and pepper on the flesh, then place cut-side down on a baking sheet. Roast for 35-45 minutes until tender.
  • While the squash is roasting, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  • Add shrimp, season with red pepper flakes, and stir-fry for 3-4 minutes until shrimp turn pink. Season with salt, pepper, and a squeeze of lemon juice before removing from heat.
  • Once cooked, turn the spaghetti squash cut-side up and use a fork to scrape out the strands resembling spaghetti.
  • Toss the shredded spaghetti squash with the garlic shrimp mixture until well combined. Adjust seasoning and drizzle with olive oil if desired.
