Ingredients
6 garlic cloves
minced
1/4 cup low-sodium soy sauce or tamari
2 tablespoons light brown sugar
1 tablespoon toasted sesame oil
1 tablespoon chili sauce (e.g.
sambal oelek)
1 tablespoon cornstarch
1 tablespoon vegetable oil
1 red bell pepper
thinly sliced
1/2 pound asparagus
trimmed and cut into 2-inch pieces
1 cup snow peas
2 pounds large raw tail-on shrimp
peeled and deveined
Instructions
- In a bowl, mix together minced garlic, soy sauce, brown sugar, sesame oil, chili sauce, and cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add red bell pepper, asparagus, and snow peas, stirring for about 3-4 minutes until slightly tender.
- Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
- Pour the sauce mixture over the shrimp and vegetables, stirring quickly to coat evenly. Cook for an additional 2 minutes or until the sauce has thickened.
- Serve hot over cooked rice, garnished with chopped cilantro and sesame seeds if desired.
Notes
For added flavor, you can marinate the shrimp in the sauce for 15 minutes before cooking.
