Ingredients
Scale
1 cup of all-purpose flour
1 tablespoon of brown sugar
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 teaspoon of ground ginger
1 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1/4 teaspoon of ground cloves
1/2 teaspoon of salt
1 cup of buttermilk
1 egg
2 tablespoons of unsalted butter, melted
1 cup of maple syrup
1/2 teaspoon of ground cinnamon (for spiced syrup)
1/4 teaspoon of ground ginger (for spiced syrup)
1/4 teaspoon of ground nutmeg (for spiced syrup)
A pinch of salt (for spiced syrup)
Instructions
In a mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, ground ginger, cinnamon, nutmeg, cloves, and salt until well combined.
In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients, and stir until just combined.
Preheat your non-stick skillet or griddle over medium heat. Add a little butter to the pan, letting it melt and bubble.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until the edges look set and bubbles begin to form on top (about 2-3 minutes).
Carefully flip each pancake and cook for an additional 1-2 minutes until golden brown.
In a small saucepan, warm the maple syrup over low heat. Stir in the cinnamon, ginger, nutmeg, and a pinch of salt until well combined and heated through.
