8 oz gluten-free pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup bell pepper, diced
½ cup red onion, finely chopped
1 cup black olives, sliced
½ cup feta cheese, crumbled (optional)
¼ cup fresh parsley or basil, roughly chopped
1/3 cup olive oil
2 tbsp red wine vinegar
1–2 cloves garlic, minced
Salt and pepper, to taste
Instructions
In a large pot of salted boiling water, cook the gluten-free pasta according to package instructions until al dente. Drain and rinse under cold water.
While the pasta cools, wash and chop the vegetables: halving cherry tomatoes, dicing cucumbers, chopping bell peppers, and finely chopping red onion.
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, and season with salt and pepper.
In a large mixing bowl, combine the cooled pasta, veggies, black olives, crumbled feta (if using), and fresh herbs, then drizzle with dressing and toss gently.
Cover and chill in the refrigerator for at least 30 minutes before serving.
Serve with a gentle stir and adjust seasoning as needed.
