Ingredients

  • 8 oz gluten-free pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper, diced
  • ½ cup red onion, finely chopped
  • 1 cup black olives, sliced
  • ½ cup feta cheese, crumbled (optional)
  • ¼ cup fresh parsley or basil, roughly chopped
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 12 cloves garlic, minced
  • Salt and pepper, to taste

  • Instructions

  • In a large pot of salted boiling water, cook the gluten-free pasta according to package instructions until al dente. Drain and rinse under cold water.
  • While the pasta cools, wash and chop the vegetables: halving cherry tomatoes, dicing cucumbers, chopping bell peppers, and finely chopping red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, and season with salt and pepper.
  • In a large mixing bowl, combine the cooled pasta, veggies, black olives, crumbled feta (if using), and fresh herbs, then drizzle with dressing and toss gently.
  • Cover and chill in the refrigerator for at least 30 minutes before serving.
  • Serve with a gentle stir and adjust seasoning as needed.
