10–12 mini sweet bell peppers (assorted colors)
8 oz goat cheese, softened
2 tbsp cream cheese, softened
1 clove garlic, minced
1 tsp fresh thyme leaves (optional)
1 tsp lemon juice
Salt and pepper to taste
Olive oil for drizzling
Preheat your oven to 375°F (190°C).
Wash your mini peppers thoroughly. Slice each pepper in half lengthwise and remove the seeds.
In a mixing bowl, combine the softened goat cheese and cream cheese until smooth.
Add the minced garlic, thyme, lemon juice, salt, and pepper to the cheese mixture. Stir to combine.
Stuff each half of the peppers generously with the cheese mixture.
Place the stuffed peppers on a baking sheet lined with parchment paper. Drizzle olive oil over the tops.
Bake for about 20-25 minutes until the peppers are tender and the filling has slightly browned.
Remove from the oven and cool for a few minutes before serving.
