  • 8 oz goat cheese, softened
  • 2 tbsp cream cheese, softened
  • 1 clove garlic, minced
  • 1 tsp fresh thyme leaves (optional)
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Olive oil for drizzling

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Wash your mini peppers thoroughly. Slice each pepper in half lengthwise and remove the seeds.
  • In a mixing bowl, combine the softened goat cheese and cream cheese until smooth.
  • Add the minced garlic, thyme, lemon juice, salt, and pepper to the cheese mixture. Stir to combine.
  • Stuff each half of the peppers generously with the cheese mixture.
  • Place the stuffed peppers on a baking sheet lined with parchment paper. Drizzle olive oil over the tops.
  • Bake for about 20-25 minutes until the peppers are tender and the filling has slightly browned.
  • Remove from the oven and cool for a few minutes before serving.
