  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1/4 cup white wine (optional, or substitute with chicken broth)
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  2. Sear the Cod: Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, or until golden and cooked through. Remove the fillets from the skillet and set aside.
  3. Make the Herb Butter Sauce:
    • Lower the heat to medium. Add butter to the skillet and let it melt.
    • Stir in minced garlic and cook for 1 minute until fragrant.
    • Add white wine (or chicken broth) and lemon juice. Simmer for 2-3 minutes, stirring occasionally.
    • Stir in parsley and thyme, and season with salt and pepper to taste.
  4. Combine and Serve: Return the cod fillets to the skillet, spooning the sauce over the fish to coat. Cook for 1-2 more minutes to heat through. Serve immediately with extra sauce drizzled on top.

Notes

  • Use fresh cod for the best flavor, but frozen cod (thawed) works well too.
  • Pair this dish with roasted vegetables, mashed potatoes, or a fresh green salad.
  • For a dairy-free option, substitute butter with olive oil or vegan butter.
