- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 cup white wine (optional, or substitute with chicken broth)
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
- Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Sear the Cod: Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side, or until golden and cooked through. Remove the fillets from the skillet and set aside.
- Make the Herb Butter Sauce:
- Lower the heat to medium. Add butter to the skillet and let it melt.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add white wine (or chicken broth) and lemon juice. Simmer for 2-3 minutes, stirring occasionally.
- Stir in parsley and thyme, and season with salt and pepper to taste.
- Combine and Serve: Return the cod fillets to the skillet, spooning the sauce over the fish to coat. Cook for 1-2 more minutes to heat through. Serve immediately with extra sauce drizzled on top.
Notes
- Use fresh cod for the best flavor, but frozen cod (thawed) works well too.
- Pair this dish with roasted vegetables, mashed potatoes, or a fresh green salad.
- For a dairy-free option, substitute butter with olive oil or vegan butter.
